Refrigeration is the process of lowering the temperature and maintaining it in a given space for the purpose of preserving food and or certain substances. The storage of perishable foods, pharmaceuticals, or other items under refrigeration is known as cold storage.
Cold Storage is used to prevent deterioration of perishable food and other items. It has great economic importance since it preserves the quality of agricultural and fishery products and promotes domestic and international trade.
In order to maintain the highest quality of food, perishables should be refrigerated by the processes of either freezing or cooling. Furthermore, storage and transportation in a low temperature environment is recommended. This temperature environment can be achieved and maintained through a cold chain in which the temperature is consistently at required levels.
